This Week & My Favourite Breakfast (currently)

This past week seems like a blur. I hardly know where all of the days went. Josh was away being a fancy bartender at Tales of the Cocktail in New Orleans so I was on my own. It was a great time to get caught up on work so I spent a lot of time in front of my computer – both at the studio and at home. It was also the week where the heat and humidity would not end and my appetite was no where to be found. I ate pretty lightly all week. Remember that egg in the avocado that was floating around Facebook a few weeks ago? Well I approached it again and now it has become My Favourite Breakfast (currently).  In a ramekin put half an avocado, add minced garlic, crack an egg into it, sprinkle with paprrika and top with shredded cheddar. Bake at 300 degrees for about half an hour or until the egg white is not so jiggly. I had a coconut Greek yogurt on the side and my dream meal was complete. I seriously want to eat this every morning for breakfast.

Another night after having spent the day at the studio this week, I came home to do more work. It was hotter inside than outside so I sat on the deck culling photos until it got dark (and I started getting creeped out). It was nearly 8:30pm before I realised that I should probably eat something. I was so not very motivated to cook. One of my homepages on Chrome is Tasteologie which is sometimes dangerous to look at when you are hungry but is also sometime inspiring to look at when you just wanted to eat something good. On the page that night was this Poached Eggs with Creamy Spinach. The food hit the spot in a healthy way and I have accepted that my poached eggs will never look as pretty as in the pictures.

Josh flew home last night. I had spent the whole day photographing a wedding 1 1/2 hours out of town. After dropping off my assistant, I drove home to dump off my equipment before heading to the airport to pick him up. When I got home, he told me his flight was delayed to an undetermined time. I started downloading cards. Finally he was leaving DC but wouldn’t be arriving until 1am. He told me that it would be late and that he would take a cab home. I sat at home downloading card after card and thought, “No way, I’m going to pick up my guy!” I got to the airport in a record thirteen minutes (I love where we live and no, I didn’t drive thaaaaaaat fast). There were more delays but when he finally came out at arrivals it was a pretty cute surprise for him. We then sat on the 427 in construction traffic for way too long and didn’t get home until nearly 3am and we were exhausted.

Life is wild and exhausting but also awesome along the way and you always have to make time for what is important to you. One of my good friends Barb was in town from San Francisco so today we managed to get up and out of the house to meet her and her boyfriend for brunch at the Drake. Brian had never been to Toronto before so I think that this was a good spot to show to him. I immediately ordered a caesar. My Aunt Nancy will say that Caesars are bad for you because Clamato contains MSG but I think that having one every now and then is alright. Plus, I ordered mine with tequila and cilantro. Josh and I had scones with jam and cream while we waited. I love scones so much and I promise to make them sometime soon. Then I had the Egge Caleb: smoked salmon, poached eggs, hollandaise over a bagel. Hello dreamland!

It’s been a hectic week. It’s been an exhausting week. At times it was hard to think with the heat and I saw a lot of silly things happen because of poor thinking. But all in all, it was a good one. I’m happy that Josh is back home. I’m happy that the humidity has lifted. I’m happy for all of the great people in my life. Make life happen.
